2020 The SERPENTS - A dry Sémillon from The Bavarian Lion, a 25-year-old vineyard in Knights Valley.  Grapes are hand-harvested then fermented with indigenous yeast.  A portion was fermented on the skins, adding notable complexity. Aged 18 months on its lees in Tuscan terra-cotta amphora and neutral French oak barrels. Richness and brightness in perfect balance. A wine for immediate enjoyment or for cellaring.  Hand-dipped in beeswax.  248 cases produced.

Citrus and citrus peel notes infuse this light yet textured wine. Its minerality make it a standout when paired with crustaceans and other riches from the sea.  

Aaron Pott's Serving Recommendation:

Best not to serve it too cold, 50°F, as some of the best aromas come out then. I would decant for 30 minutes at least, just to get the best of it.
