2018 The SERPENTS - A dry Sémillon from 24-year-old vines from The Bavarian Lion vineyard in Knights Valley.
Grapes are hand-harvested then fermented with indigenous yeast. A portion was fermented on the skins, adding notable complexity.
Aged one year on its lees in Tuscan terra-cotta amphora and neutral French oak barrels.
A wine for immediate enjoyment or for cellaring. Hand-dipped in beeswax. 209 cases produced.

"Pecorino, lime, linalool, tomato leaf, grapefruit, quince, acacia flower, cardamon, super flinty and mineral in the nose.

"Best not to serve it too cold, 50°F, as some of the best aromas come out then. I would decant for 30 minutes at least, just to get the best of it."
