2016 THE SERPENTS - A dry Sémillon from 20-year-old vines from a single vineyard in Knights Valley. Hand-harvested then fermented with indigenous yeast. Aged one and a half years on its lees in Tuscan terra-cotta amphora and neutral French oak barrels. Unfiltered. A wine for immediate enjoyment or for cellaring. Hand-dipped in beeswax. 175 cases produced.
